crunchy chocolate chips
CRUNCHY CHOCOLATE CHIPSadapted from a page of a cookie book. i cant remember.'this cookie is for those of you who share my husband's view that a good chocolate chip should be crunchy. They are great alone, and a real treat broken up as a topping over ice cream.'original
INGREDIENTS (ingredients i modified)
makes 48 (makes ~60)
- 1.75 cups all purpose flour
- 0.25 tsp baking soda
- 0.25 sp baking powder
- 0.5 tsp salt (i didnt use salt)
- 200g butter (used 180g salted butter)
- 0.5 cup light brown sugar
- 5 tbsp granulated sugar
- 1.5 tsp pure vanilla extract (1tsp vanilla essence)
- 1 whole large egg (difficult to find in the mkt so i used two eggs instead replace the egg yolk below)
- 0.5 large egg yolk (above)
- chocolate chips (vary according to own preference)
- preheat oven to 200C. Line several baking sheets with parchment paper or grease them lightly with vegetable oil.(or use a non-stick tray)
- sift flour, baking soda, baking powder and salt together into a small bowl and set aside.
- (use electric mixer) cream butter, both sugars and vanilla extract (essence) together until light and fluffy
- add the egg and yolk and beat on medium speed until they are blend.(add one egg a time and mix well before adding the other one)
- add the flour mixture and mix on low speed. (divide the flour mix into 3 batches and add one batch first and mix well before the next)
- add the chocolate chips and blend until they are mixed in (use a spoon)
- drop the dough by heaping teaspoons inches apart on the prepared baking sheet (slightly smaller size than rocher or slightly bigger than maltezers) store the remaining dough into the fridge first if it didnt finish in the first batch.
- bake the cookies until they are firm and very light golden with darker golden edges. cool on sheet (my oven needs only 8 minutes. so take care before it gets burnt!)
- THIS IS VERY IMPORTANT! store the cookies in an AIRTIGHT container at room temp for a day or two. after that, store the container in the freezer for up to 2 weeks. bring the cookies to room temp before eating. (DO NOT EAT COOKIES THAT ARE FRESHLY BAKED FROM OVEN! wait till they are cool first before consumption.)
